Recipe: Almond-Crusted White fish

I came up with this recipe on a whim last week. I knew we had a large quantity of white fish (we think it was trout) in the freezer from our CSA share. We both love fish but I wanted to do something different than your classic pan-sear or grill. It needed to be gluten-and-dairy free because of my detox.

So I came up with this beauty.

Doesn’t look like all that much, and it is so simple, it’s hard to believe it’s all that great. But let me tell you, this fish packs a LOT of flavor. I can’t wait to make it again!

Almond-Crusted White Fish

We used fresh-water trout, but you could use any white fish here and it would work beautifully!

Ingredients:

1 whole filleted white fish

Salt and pepper

Freshly squeezed lemon juice

Corn flour, or other choice of gluten-free flour

1/2-3/4 cup raw almonds, depending on the size of your fish

Garlic powder, onion powder, parsley to taste

Olive oil
To prepare:

Preheat oven to 350 degrees.

Grease a baking pan and place fish fillets atop it.

Sprinkle fillets generously with salt and pepper, and squeeze on lemon juice.

Pat on corn flour.

In a food processor or high-speed blender, process almonds until they are ground to a coarse meal. Be careful not to turn them into a paste.

Mix almonds with garlic, onion and parsley to taste.

Press almond mixture on top of fish, all over the skin-free area. Drizzle with olive oil and place in oven.

Bake for 10 minutes and switch oven to broil. Broil 2-3 minutes until top is golden.

Serve alongside some quinoa or rice, to keep it g-free or some couscous and a green veggie or a nice big salad.

The almond must gives an amazing texture and taste to the fish. It sounds so simle, but yet so delicious :)
