Being a little under the weather this week has made my efforts in the kitchen a little lacking. I managed a decent beans n’ rice dinner on Tuesday, Nick made me some cure-all noodle soup on Wednesday and last night I whipped up some fried tempeh, kale salad and buckwheat.
So I’ve been cooking (and washing my hands until they crack, don’t want there to be two of us sicklings in the house!). But my make it home made challenge for the year has taken a bit of a backseat to my pounding head and achy body. So I thought instead of attempting to create a new recipe, I’d share with you one of my favorite home made standbys from the last year: Artichoke White Bean hummus.
I’ve posted about this creamy, tangy, delectable dip before but I don’t think I did it justice. This stuff is like crack. But healthier. I, nor anyone else I put it in front of can keep their paws veggies, gluten-free crackers or crusty bread away from it. It’s that good.
So for lack of creativity I’m giving a little shout-out to my favorite 5-minute spread.
Artichoke White Bean Hummus
Ingredients:
1 18-oz can white beans, drained and rinsed
1 6-oz can marinated artichokes
1 large clove garlic
~2-3 Tb extra virgin olive oil
dried basil, oregano, parsley, salt, pepper and lemon juice to taste
Method:
Blend white beans with a drizzle of olive oil in a high speed blender or food processor until chunky. Add artichoke hearts (with marinade) and garlic, and continue blending until smooth. Season with basil, oregano, salt, pepper and lemon to taste.
Serve with crudites, pita chips or your favourite cracker. It’s also lovely with some marinated sundried tomatoes on top. Mediterranean-style yum!
