Got balls?

On Tuesday night, Nick agreed to drive me to bootcamp because I was complaining about having to stand in the rain (what a guy) so I promised him some treats the next day. And when I found out my amazing fellow blogger and good friend Steph had a birthday recently, I knew I had to come with some treats in hand for our Whole Foods lunch date.

So what to make? I knew I wanted chocolate of some sort, which was really for my own benefit as well as the pleasure of my samplers, and I knew I wanted it to be somewhat healthy. I remembered seeing a recipe for raw cacao balls on Gillian’s blog recently, so I decided to give them a go.

I have always been intrigued by raw desserts. When I’ve gone out to raw restaurants, I love a bite or two but I find them to be often to be too heavy for me, or too sweet for my taste. All those nuts and all that raw agave is just a bit too much all at once.But once I tried one of these, I was sold. Not overly nut-heavy, though nuts are the base, definitely not overly sweet and super chocolatey? You had me at raw cacao. ;)

Raw Cacao Almond Truffles

modified from this recipe

1/4 cup raw nut butter (I used almond)

1/2 tb coconut oil

2 tb raw cacao powder

1/4 c raw almonds

1/4 c raw walnuts

1 tbsp chia seeds

1 tsp vanilla

splash non-dairy milk of choice

stevia, to taste (I used one packet)

Blend all ingredients in a food processor. Roll them into balls and roll in desired topping. I used more raw cacao and some coconut. Store in the fridge.

Makes about 12 balls.

And you are one sexy lady! I’m so glad you added almond butter, I didn’t have any on hand but thought that would be perfect! They look awesome!!!

These sound delicious! I’ve made raw truffles before but my recipe involves cacao butter and these sound much easier to handle

I recently started t make my own truffles, and bon-bons as well, I never thought how easy they were. If you like chesnuts, try and add some pure to the choco mix next time, it`s really delicious!
