Mexican goes veggie! These black beans are so flavorful, and the avocado sauce so creamy, your family won’t even know they’re vegan! I actually thought to myself while devouring these, “Wow, if I could eat like this every meal I would be vegan forever!”
The best part? They’re pretty darn easy! Sure there are two recipes involved, but they’re simple and quit and the best part- the assembly is done at the table! Let your family do the work for once

Vegan spicy black bean avocado tacos
Ingredients:
1 recipe Spicy black beans
1 recipe creamy avocado sauce
Organic salsa, or make your own!
Lettuce of choice
16 small corn tortillas, warmed until pliable
Spicy Black Beans
1 tbsp olive oil
1 small-to medium onion, diced small
2 stalks celery, diced small
1 can of black beans, drained and rinsed well
1/2 tsp chili powder
1/2 tsp cumin
1/4 tsp garlic powder
cayenne pepper to taste
salt to taste
1. Sautee onion in olive oil until translucent. Add celery and sautee until soft.
2. Add black beans, stir well. Cook for 2 minutes. Add spices and salt, stir and continue cooking until flavors are melded together. Taste for seasoning and remove from heat to cool slightly.
Creamy chipotle lime avocado sauce
1/2- 1 whole avocado
lime juice to taste
ground chipotle
pinch of salt
water to thin
1. This is a pretty simple “to taste” kind of recipe. In a blender or food processor, process avocado with lime and chipotle until creamy. Add water to thin as desired. Add more spices to taste.
To assemble: Layer lettuce, beans, salsa and avocado sauce on warm tortillas. Wrap, devour and repeat!
Serves 3-4
As a bonus, these beans taste great over rice. Or wrapped in a tortilla as a burrito. Or over bread. Or on their own. They’re pretty addicting! In the best way possible, of course.

Hey Kristen, I recently found your blog and love it! I was wondering where you find the corn tortillas, I live in the GTA and have not been able to find them. I am new to the gluten free lifestyle and don’t really enjoy the rice tortillas since they fall apart very easily.

I usually use sprouted corn tortillas by Foods for Life brand, which I find at Whole Foods, Big Carrot & Noah’s- most larger health food chains will have them. I also like a brand of local corn tortillas, Alymer, which are harder to find, but they are delicious if you do find them! I know they have them at Culinarium and Rowe Farms. Hope this helps! xo
