I travel back and forth to the States quite often, and staying healthy on the road can be quite a challenge. I used to use a road trip as a sort of “splurge” of sorts, not caring as much about what I ate, simply for convenience sake. But as my trips became more frequent, it didn’t take long to realize this was not a healthy practice.
Instead of grabbing a Subway sandwich (which I can no longer do now that I’ve officially transitioned off of gluten) or indulging in my old favorite- a Wendy’s frosty, I pack lots and lots of snacks with me to keep me satiated, nourished and happy.
Sometimes in a pinch I substitute with a plain salad from a fast food joint to get a few (albeit not the best quality) veggies, or grab a piece of fruit or a Naked juice to go. However, taking the train posed a whole new challenge. I was crossing the border, so that meant no raw fruits and veggies. I knew I couldn’t survive 8 hours on nothing but corn chips, so I had to put my healthy chef’s hat on, and this is what I came up with.
Crunchy Munchy road snacks
Equipment needed: a dehydrator.
Chewy Apple Chips
1-2 apples of choice, cored
pinch of cinnamon
1. Slice apples into thin rings, slicing into half moons if desired.
(The thicker the rings, the chewier they will be, and the longer they will take to dehydrate.)
2. Sprinkle with cinnamon, and spread evenly on a dehydrator sheet
Dehydrate at 145 for 8-12 hours until they reach desired consistency. Let cool slightly and pack to go!

Quick n’ Cheezy Kale chips
1 large bunch of kale, washed, stemmed and torn into bite sized pieces
Easy Cheezy Tahini Sauce
2 tablespoons tahini
3 tablespoons nutritional yeast
1 tablespoon lemon juice
pinch salt
water to thin
1. Mix tahini, nutritional yeast, lemon juice and salt in a large bowl. Add water to thin slightly until it is thin enough to coat, but not run off of, kale pieces.
2. Add kale to bowl and massage thoroughly until kale starts to soften and is fully coated with tahini mixture.
3. Spread evenly on 2-3 dehydrator sheets. Dehydrate on at 115 3-5 hours or until crispy and dry.
Easy peasy, and I had delicious snacks all day morning. We all know how I spent my afternoon

Brilliant Kristin! I’d love to dehydrate kale chips- do you do this in the oven or do you have a dehydrator? Where do you get the sheets?
I have a dehydrator (the sheets came with it), but you could most definitely make these in the oven at the lowest setting with the door open for about half as much time! Just keep an eye on them!
