Breakfast Pudding

I think we all know by now I have a thing for making dessert for breakfast. It’s just such a lovely way to start the day, no? A big milkshake, chewy cookie or creamy pudding with a mug of herbal tea? Sounds good to me.  This recipe started out as a simple chocolate milkshake green smoothie, and when I stuck my spatula in to test- it was PUDDING! 

Now I could have made the choice to add more almond milk or water and turn it into a smoothie. But I really couldn’t pass up the opportunity to eat a giant bowl of pudding for breakfast. So I scooped it in a bowl, topped it with a sprinkle of granola and ate it with a spoon- SIAB {smoothie-in-a-bowl} turns pudding. And oh, was it decadent. I loved it so much I made it again the next day. And again… and, well, something else we all know by now- I get into food phases!

Not that it’s a bad thing, because this bad boy is choc full of healthiness. Just like a green smoothie, but a lot thicker and creamier. It plays on the concept of an avocado pudding, but with more nutrients to fuel your morning. Healthy fat, protein, fiber, greens, and a bunch of antioxidants to boot. The whole package, if you will.

Green Protein Breakfast Pudding
Serves 1

1/4 large avocado
1 medium/large banana, frozen
1 date, pitted
1 scoop protein powder of choice (I prefer vanilla Sun Warrior *see note below)
2 tbsp raw cacao
1-2 stalks celery, chopped
pinch sea salt
pinch cinnamon
large handful spinach
1/2-3/4 cup nut milk or water (or mix of both)

1. In a high speed blender, combine all ingredients except liquid. Starting with 1/2 cup, add milk/water until desired consistency is reached!

And voila! Pudding for breakfast that won’t leave you fearing a blood sugar crash.

Yum, love pudding/smoothie in a bowls :) I always add way too much xantham gum to my smoothies and end up eating them in a bowl!!

Do you add any xanthan gum?
I’m currenlty very underweight and struggling with horrible digestion. Not sure of what was cause and effect anymore (depression, eating “issues”, digestive problems, etc). I love love your food “philosophy – and I am either too stubborn myself to limit or cut out certain problem foods, or whatever. I’m real real underweight and I have been in past, but I gained sensibly.
This time, its been over 3 years of low weight, aches, pain, extreme fatigue, not able to exercise at all anymore, bowels are a complete mess, no joke…the no no exercise…while trying to gain…its hard.
And this time gaining weight its so much different cause of the discomfort, the digestion and bowel trouble , and cause I”m actually going on binges…and I truly do not think i should be binging, eating chocolate, eating cookies, etc…when so underweight, trying to gain healthfully, and NOT exercising :(
I wish I could go to Italy :(
I really like your site. I’m worried myself cause my weight is low enough that the doctors can legally put me in a hospital for MONTHS…despite me being 30 years old.

I don’t add xantham gum to this, no- the avocado makes it nice and thick & creamy!

I am definitely sympathetic to your situation, I have experienced both before. It is hard to cut out problem foods, and it took me a while, but honestly- once I did, I didn’t want to go back because I felt SO good! When it comes to gaining weight, I highly recommend seeking a professional’s advice. They can give you a meal plan and help you get back on track! They might also be able to help with your digestive troubles, though I found trial & error worked the best for me, we all have different bodies! When I was underweight I sought the help of a professional and yes, I did read food blogs, which helped me very much because there were many incredible women who ate balanced, healthful meals that I could look up to and realize what healthy portions were- HOWEVER, we are all different and if it makes it hard for you to get on track with your weight by reading them, my advice would be to stop for a bit until your body is back on track. These are, of course all things you can and should discuss with your doctor and nutritionist!
