I know what you’re thinking. Another smoothie, Kristin? But hear me out on this one. I drink lots of smoothies, and I drank an excessive amount during my green smoothie cleanse- but this one was different. This one stood out from the rest because it was just so packed with unique flavor experiences, and not to mention super healthy. So really, I had to share it with you, don’t you think?
I love the fruit-and-cilantro combo, I think they play off of each other nicely. That is of course unless you’re a cilantro hater. We don’t like those in our house- we eat a lot of cilantro.
Instead of going the spicy route as is done with most fruit salsas, I chose to go light and refreshing on this smoothie, pairing mango with tangy cilantro, cool cucumber, romaine lettuce and a hint of lime. To my delight, it came together perfectly. I can imagine myself sipping this cool concoction all summer long.
Mango Cilantro smoothie with lime
Serves 2
2 cups frozen organic mango
1/2 avocado
1 medium cucumber, peeled only if not organic
1 head romaine lettuce
1/2 bunch cilantro
2 tbsp fresh lime juice
2 scoops vanilla protein powder (I like Sun Warrior)
pinch sea salt
1/2 tsp spirulina (optional)
1-2 cups water, depending on desired consistency
1. Add all to a blender and blend well until smooth, adding water to reach desired consistency.
