On the Sunday evening of my Holiday weekend, I had the pleasure of getting together with two beautiful ladies to sip Kombucha cocktails on the balcony, celebrate life, share inspiration and discuss the future. And eat massive salad beasts, of course.
It was late Sunday afternoon when I realized I had no idea what I would be bringing to our potluck get together. I thought about the kind of things I loved to put on my salad- lots of greens and veggies (Gillian had that covered), nuts and seeds, roasted chickpeas (done and done), raw granola, avocado- there it was! Avocado. What could I do with avocado that would be interesting? And so my creamy avocado green goddess dressing was born.
I know it’s not your traditional Green Goddess dressing {mayonnaise, sour cream, chervil, chives, anchovy, tarragon, lemon juice, and pepper}. But it’s green, and we’re all goddesses, so I’m going with it.
I used to be afraid of creamy dressings- I was always taught they were “unhealthy” because of their usual high calorie-and-fat content, and guided to stay away and stick to lighter, “viniagrettes” instead. But oh, how I love my creamy dressings- always have, always will.
Now there is a time and a place for viniagrettes, there is (in fact, I have a recipe coming on the blog soon). But sometimes you want a thick, creamy, full-fat and fully delicious dressing to coat your salad and make you want to go back for second, or thirds. And with these ingredients? You can’t even try to tell me it’s unhealthy. So go ahead, indulge.
Creamy, healthy avocado green goddess dressing
1/2 a large ripe avocado (or 1 whole small)
1/4 cup tahini
2 green onions, roughly chopped
small handful parsley
1 tbsp lemon juice
1 tbsp apple cider vinegar
1 clove garlic, minced
1 tsp dried basil (fresh, if you’ve got it would be even better!)
1 tsp dried oregano
sea salt, to taste
1/2-1 cup water as desired
1. Throw all ingredients up until water into a blender. Starting with 1/2 cup water, blend until smooth.
2. Add more water to reach desired consistency, taste for seasoning and serve!
I especially like this dressing with smoky toppings like chipotle crusted tofu or spicy roasted chickpeas, mmmm.
