Lazy Sundays {Gluten-free waffles}

Sometimes lazy Sundays are good for the soul.

This weekend was likely the last my husband and I will spend together for maybe the next month or so, but our Saturday was cut short thanks to Mother Nature extending Nick’s overnight sailing trip almost a full day. We ended up staying out late, eating Pad Thai, drinking wine and seeing a movie, so on Sunday we slept in late.

I woke up first and lazily made waffles- some of the best waffles either of us have ever had (and they just so happen to be gluten-and-dairy-free), and we relished in the simple pleasure.

We laid around for a while before heading out on a hike around the waterfront, being reminded of the beauty that is only minutes from our doorsteps, and excitedly planning future adventures.

We spent the afternoon after our hike booking tickets for our short trip to NYC this summer on my birthday. I made us an easy dinner and we ate in silence, while watching a documentary on something we both love: eating fresh and eating local.

Lazy Sunday waffles
{Gluten free chia waffles with fresh blueberry compote}

Waffles-

1/2 cup brown rice flour
1/4 cup almond flour
1/4 cup arrowroot starch
1/2 tbsp baking powder
1/4 tsp salt
1/2 tsp cinnamon
1/2 tbsp chia seeds
1/2 tbsp cane sugar
1 egg or 1 chia egg (1 tbsp ground chia & 1/4 c water, blended)
1/4 cup oil
1 tsp vanilla
1/2 cup milk
2-4 tbsp water, as needed

1. Preheat waffle iron and grease with a small amount of coconut oil or butter.

2. Whisk dry ingredients in a large bowl. In a seperate bowl, whisk egg or substitute, oil, vanilla and milk. Add to dry ingredients and whisk well.

3. Add more water as necessary to batter to create desired consistency. Pour into waffle iron and cook on high until waffles are done as per waffle iron directions. Top with compote (recipe below), a sprinkle of dried coconut and perhaps a drizzle of maple syrup. Enjoy in bed.

Fresh blueberry compote-

1/2 pint blueberries
2 tbsp water
1 tbsp lemon zest
pinch stevia or 1/2 tsp honey
pinch cinnamon

In a small frying pan, add blueberries and water. Heat on medium until water starts bubbling. Turn down to a simmer, add stevia/honey, cinnamon and lemon zest and simmer for 5-10 minutes until blueberries are soft and most of the water has evaporated, leaving a thick, sweet compote.

This recipe serves two (2 large Belgian waffles)  but is easily doubled or tripled for more people.

I am jealous of your husband.

Looks like the perfect weekend!! My ideal lazy Sunday is strolling down for brunch somewhere, eating spicy eggs and spicier Caesars, then going back to bed, picking up some ribs from the market and slow roasting them til dinner. We’ve done this before and it was pretty much heaven.

Ooh, how extraordinary..chia seed waffles. The ingredients look great (for me veganised) I wish I had a waffle maker. Do you think the mix would work for a kind of panwafflecake?

My perfect lazy Sunday? Hmm, too many things spring to mind but it would involve sunshine, being happy in my skin, being with friends but also having some alone time, eating scrumptious vegan food that makes me feel great and having the day peppered with moments of serendipity and a hearty walk. thanks for sharing your waffle and recipe for a happy Sunday
