Well, hello! Long time no talk. Looks like you guys had a three-day weekend…from me. I have to admit, I have been running around like crazy and severely neglecting many things in my life- the blog, being one of them, my desk being another, and the cats are planning a protest if I continue to miss their sixth meal top-off (because five meals are not nearly enough). I have been beyond busy, and I really need a vacation.
Lucky for me, I am jetting off to Rhode Island on Thursday morning. It has been far, far too long since I saw my family (two months- that is LONG for a homebody like me) and I miss this squishy face way too much.
Hopefully, my mini-break will be enough time to relax, recharge and get some serious retail therapy so I can focus more on the things I’ve been neglecting. I have SO much blog material from recipe testing, it is coming out of my ears and I am bursting at the seams to share it with you—as soon as I find time to sit down and write. So hold tight and I will be back in full swing shortly! For now, a few things worth mentioning.
Last week I talked about some interesting stuff. At least I think so. Like my unintentional steak snobbery. My strange love for all things fennel. But my favorite recipe of the week was definitely my hazelnut herb-breaded chicken. I want some of that now, please.
I spent the whole day with this beautiful lady on Friday. I catered her TV shoot set and got the awesome bonus of hanging out with her for 10 hours! She gives me a ridiculous amount of inspiration, it’s incredible! Gluten-free coconut doughnuts? I think that needs to happen, ASAP.
Things in the blog world I need to make:
-Cardamom almond pear crisp
-Smoky white bean chicken chili
-Crunchy kale and coconut bowl
-Elvis cookies
My efforts to organize are going surprisingly well. A little bit here, a little bit there. See?
P.S. I know how totally sad my beet greens look. Boo.

In an effort to drag my husband from his late-winter-video-game-rut, I packed my Vibrams in my bag and today we are going rock climbing. I am SO excited. Nick still wants to play Skyrim all day. Boys.
The picture above? That was my breakfast Saturday. Seriously. I never make breakfasts that fancy. Blame it on the abundance of gluten-free bread in my fridge, or pure inspiration, but I’m just happy it happened.

We haven’t ventured outdoor rock climbing in the GTA yet, we go to Rock Oasis gym on Carlaw! It’s a great indoor gym, though. But YES to rock climbing and/or hiking!!
I will be making those cookies for sure, I love how few ingredients they have- they look awesome!
Coconut flour is AMAZING. I would start with something simple like muffins, don’t forget to use a lot of eggs (about 3-4 eggs per every 1/4 cup) and 1/4 c=1c of regular flour so you don’t need much!
I think gluten-free coconut doughnuts need to happen asap too!
