I know it’s not strawberry season yet. But I just couldn’t wait! I’m craving the sweet flavor of spring, and luckily I had an excuse to buy springy produce out of season while recipe testing. Not something I do very often, but well worth the price when I get to enjoy salads like these!
This salad came to me pretty naturally. I wanted a slightly savory, lightly sweet salad to complement the strawberries and I knew I wanted to use the incredible goat feta we had left over. So I whisked together a quick balsamic vinaigrette with some chopped fresh mint, tossed the strawberries in and let it sit to absorb the flavors. When it was nice and flavorful, I placed it atop some spring greens (I used spicy arugula) and topped with with a generous heaping of feta. It went great with the marinated skirt steak I made up and I can’t wait to eat it again… when they’re in season, of course!
Marinated Balsamic Strawberry Salad with feta and mint
Serves 2-3
1/2 pint strawberries, quartered
Marinade:
2 tbsp balsamic vinegar
1 tbsp lemon juice
1 tbsp olive oil
2 tbsp chopped fresh mint
Drizzle of honey or pinch of stevia
Spring greens of choice, to serve (I used arugula)
4 tbsp goat’s milk feta, crumbled
1. Whisk marinade ingredients together, adding stevia or honey to taste for light sweetness. Toss quartered strawberries with marinade and let sit for 15-30 minutes, until strawberries are tinted dark and flavors have melded.
2. Place on top of a bed of arugula or spring greens and top with crumbled feta. Enjoy!
