Peach and Blueberry Breakfast Parfait

More often than not, you will find me sipping a green smoothie (though usually it’s actually an unappealing shade of brown thanks to my love of cacao!) for breakfast to start my day. But my favorite breakfast is none other than a simple yogurt, fruit and granola bowl—and we know how much I love my granola! This parfait fancies up the simple morning meal, with the addition of warm maple-poached blueberries and fresh summer peaches (if you can get them). Before the summer ends completely, make us of the fresh fruit that is still in the markets and groceries- and make this parfait.

I made this for my mom when she came to visit a few weeks ago. We both enjoyed it thoroughly and it was the perfect start to our spa day. It didn’t take long at all, and I even made the granola topping from scratch. Simple, healthy and delicious- C’est parfait!

Breakfast parfait with peaches and maple poached blueberries
Serves 2

Maple poached blueberries:
1/4 cup maple syrup
1/4 cup fresh blueberries (local, if you can get them)

1. Place maple syrup in a small pot. Bring to a simmer.
2. Add blueberries to simmering syrup and stir well. Cover and cook for 3-5 minutes, until blueberries begin to soften but are not falling apart.
3. Remove from syrup with a slotted spoon or drain, reserving 1-2 tbsp liquid.
4. Mix blueberries with 1-2 tbsp syrup, just enough to make into a thick sauce.

To assemble:
1 cup organic greek or mediterranean style yogurt (full-fat)
2 small peaches, sliced thin
maple poached blueberries (recipe above)
1/2 cup vanilla almond granola (granola of choice or chopped nuts)

In a wine glass- or if you’re super fancy and have some, a parfait glass- layer your ingredients, starting with a layer of sliced peaches, followed by yogurt, 1-2 tbsp blueberry sauce, and repeat. Top with a thin layer of yogurt and vanilla almond granola, garnishing with a few blueberries if you’d like!
