Philosophy
I don’t just eat to live. I live to eat.
Food is fuel, but it is also meant to be enjoyed.
I believe in good food.
Food you ate once, and will never, ever forget. Pizza topped with steaming fresh mozzarella, basil from the garden and deep red, juicy heirloom tomatoes made with love that I ate once upon a time in Italy. The fresh baked croissant I shared with my husband on the perfect breezy Saturday morning in August, and the walk we took afterwards with the taste of butter still on my lips. The recipe for coconut cake that is passed on between my friends, but never without the offer for a slice once it is baked. Food that is so purely flavorful, the simplicity is breathtaking. Bakes and stews and curries and braises, sautees and pan sears. A slice of banana bread, hot out of the oven with a pat of cultured butter or just a simple green bean, picked straight off of the stalk in the height of summer.
I believe in everything- yes, everything in moderation.
I’m not interested in labeling anything but my jars of grains and beans, especially labeling foods “good” or “bad”. No foods are bad when eaten in strict moderation; some things should be eaten in more moderation than others, but there is no reason (barring allergies) any foods should be eschewed completely. Life is meant to be lived and food is meant to be enjoyed. Because saying no to such delicacies is saying no to a pure pleasure you can’t get anywhere else.
I believe in simple, whole food.
Food straight from the earth. Fresh strawberries picked the day before out of the garden for a sweet ending. Bright greens, steamed to perfection and paired with a sprinkle of goat’s milk cheese and a hint of salt and pepper for a simple, but satisfying lunch. Going to the farmer’s market on the weekend for inspiration, and cooking up a wildly creative meal with seasonal produce and local, natural meats. Foods that energize your body and mind. Food that gives you life. The food our ancestors ate and thrived off of, without nearly as many diseases as we see today.
I believe in natural nutrition.
That wholesome food cures all. That there is nothing wrong with spinach in smoothies, and you can never eat too many vegetables. That no matter what we eat, as long as it is undoctored by man and cooked with love, is healthy.
I don’t believe that “one diet fits all”.
We are all different, and this is what makes us unique and beautiful. A pyramid or a plate is not going to tell you what is best for your body, only you can determine that with careful consideration of your own responses to food. It is up to you to determine what is best for you, and no one else.
I believe that less is more.
A little bit of the real stuff- real butter, real cream, ice cream, bacon, steak, sugar, whatever your poison may be… is better than a lot of the fake stuff. And way more satisfying.
I believe in knowing where your food comes from.
Buying local is a simple choice we can make that can have an incredible impact on both our health and our community. Ensuring your food is without added pesticides, hormones, antibiotics or other unnecessary chemicals is as essential as choosing the right gas to fuel your car, and arguably more important. It’s not about organic stickers or unbacked claims on cereal boxes; it’s about having knowledge about the food on your plate.
I believe good food is worth the price.
I believe putting our dollars towards all-natural, organic meats, pesticide free produce and sustainable seafood is the best place our hard-earned money can go. Choosing what you eat now is choosing your future. You pay now, or you pay later.
I believe in chewing slowly and savouring every bite.
You never know when you are going to taste that flavor again.
I believe that life is too short to not eat butter.
