Philosophy
I don’t just eat to live. I live to eat.
Food is fuel, but it is also meant to be enjoyed.
I believe in good food.
Food you ate once, and will never, ever forget. Pizza topped with steaming fresh mozzarella, basil from the garden and deep red, juicy tomatoes made with love that I ate once upon a time in Italy. The fresh baked croissant I shared with my husband on the perfect breezy Saturday morning in August, and the walk we took afterwards with the taste of butter still on my lips. Food that is shared with family and friends. The broccoli bake my mother makes every Thanksgiving, Christmas and Easter, that I look forward during the months in between. The recipe for coconut cake that is passed on between my friends, but never without the offer for a slice once it is baked. Food that is served to you, on a steaming hot plate so simply the scents send you into a foodie frenzy. Bakes and stews and curries and braises, sautees and pan sears. Fresh baked bread with butter. Restaurant food and home cooked meals, as long as it is good.
I believe in simple, whole food.
Food straight from the earth. Fresh strawberries picked the day before out of the garden, and topped with only a hint of organic whipped cream, for a decadent dessert. Bright greens, steamed to perfection and paired with a sprinkle goat’s milk cheese and a hint of salt and pepper for a simple, but satisfying lunch. Going to the farmer’s market on the weekend for inspiration, and cooking up a wildly creative, or maybe a more refined meal with seasonal produce and local, natural meats. Foods that give you energy. Organic, all natural foods. Foods that give you life. The food our ancestors ate and thrived off of, without nearly as many diseases as we see today.
I believe in natural nutrition.
That wholesome food cures all. That there is nothing wrong with spinach in smoothies, and you can never have too many fruits and vegetables. That no matter what we eat, as long as it is without added pesticides, preservatives, antibiotics, hormones or chemicals of the like, and is not modified far from it’s natural form, is healthy. However, I don’t believe that “one diet fits all”. There is a reason I left my formal nutrition schooling; that being it is taught that eating one specific way is beneficial to the masses, and I believe this to be untrue. It takes months, even years of carefully watching your own habits to determine what is best for you, and no one else. And that is what is the healthiest for each and every one of us.
I believe in everything- yes, everything in moderation.
No foods are “bad” foods to me. There are some things that should be eaten in more moderation than others, like cream sauces and chocolate cake. But in no way (barring allergies!) should we eschew them from our diets fully. Because saying no to such delicacies is saying no to a pure pleasure you can’t get anywhere else.
I believe that less is more.
A little bit of the real stuff- real butter, real cream, french bread, ice cream, bacon, steak, sugar, whatever your poison may be… is better than a lot of the fake stuff. And way more satisfying.
I believe in chewing slowly and savouring every bite.
You never know when you are going to taste that flavor again.
I believe wine is an amazing antioxidant.
A great meal is almost always complimented by the right wine selection, and sometimes even the best beer selection. The perfect match takes a good meal and turns it into a fantastic one by introducing a full sensory experience.
I believe that life is too short to not eat butter.
